Description A pumpkin seed, also known as a pepita, is the edible seed of a pumpkin or other types of squash. The seeds are typically flat and oval shaped, have a white outer husk, and are light green in color after the husk is removed. These tiny green seeds are highly nutritious and are rich source of protein, unsaturated fatty acids, vitamins, and minerals. Simply add on top of breakfast cereal or smoothies or lightly toast them and sprinkle in salad or stir-fry. Or mix them with other nuts and enjoy as a snacks.
