Description Freekah is green durum wheat harvested while still soft, young and green, then roasted and dried. The process captures the grains at a state of peak taste and nutrition. It is also known as Freekeh frikeh, fireek, or farik. It is low GI, low carb high in fibre (up to four times the fibre of brown rice) and rich in prebiotic properties. Freekeh can be used in place of many other grains for an increased protein kick.
